Rubato originates from chocolatier Gustavo and Bruno’s vision to establish a chocolate factory in Brasília, crafting confections from locally-sourced ingredients like pequi and cerrado vanilla. Their aim is to blend Gustavo’s culinary expertise with the flavors of the Brazilian biome.
Rubato’s core objective is to embody meticulous craftsmanship and environmental stewardship throughout its production process, from sourcing ingredients to the final product. The brand’s essence lies in its fusion of Brazilian culture, biome appreciation, and music, evident in its commitment to fair trade practices and the ambiance of its factory, where music and culture intertwine seamlessly.
We embraced the collage technique to merge various semantic fields, drawing inspiration from Brazilian music legends like Pixinguinha and Jackson do Pandeiro, as well as typographic styles found on Blue Note record label album covers. The factory, named after a style of musical improvisation, reflects this fusion.
Our primary product, chocolate bars, showcases pure tempered cocoa with scaled collages reflecting the visual identity’s elements and key palette. Bars featuring added ingredients such as “cajuzinho-do-cerrado” and baru nut convey narratives linked to specific themes, from the original biome to Brazilian songs and theatrical pieces, enhancing the brand’s storytelling.
